Preparation: The garlic cloves and fresh parsley are to be chopped and then mixed with e.v. olive oil and lemon juice. The squids are to be accurately washed and then left in such a sauce, whilst the grill (or a proper pan) is warming up. The sauce will be useful to help the squid not to stick and to dress your squids after cooking.

Preparation: The squids are to be accurately washed and then left in a pot with cold water and a garlic clove for a few hours. Afterwards, the pot will be put on a very gentle fire for a few minutes (10 to 15 min.), in any case not until the water starts boiling: when the squids are proved to be softened remove them from the pot, cut them into little pieces and allow them to cool down. Once chilled, dress your squids with chopped garlic clove and fresh parsley, Season with e.v. olive oil, ground pepper and lemon juice.
