Hot Spinach - Spinaci al forte

 

Fresh and washed spinach leaves are to soften in boiling salted water with some garlic for no longer than 3 minutes. In the meantime, a hand-smashed garlic is let in a pan with extra virgin olive oil and some red hot chilly peppers on a very low fire. Spinach leaves are to be placed in the pan before the oil starts frying and without SCOLARE. Stirring will allow all the leaves enter into contact with olive oil. They are to be covered, cooked for 2 minutes, then served hot, preferably with grated parmisan cheese.
