Anchovies au gratin First published: 04/VII/05 Ingredients:
Preparation: The garlic clove, capers, grated parmisan, salt and fresh parsley are to be chopped in the mortar and then mixed with e.v. olive oil and pepper. The anchovies are to be accurately opened and washed before being marinated with the sauce. The bread crumbs are to be spread over the marinated anchovies, which are then rolled up and placed on a heat-resisting pan (if they are meant to cook in the oven, at 180° for 10 minutes) or in an ordinary pan, where they will be turned upside down during cooking.
