Mussels au gratin First published: 07/VII/05 Ingredients:
Preparation: After being accurately brushed and washed, the mussels will be left cook some minutes in a pan with a spoon of olive oil until they open their valves (the superior ones are then to be thrown away). They are then to be placed on a heat-resisting pan greased with olive oil, the fruit facing upwards. The bread crumbs, chopped garlic clove and fresh parsley are to be mixed together and seasoned with salt, pepper and the filtered sauce of the mussels. Such mixture is then to be spread on the top of the mussels together with a little e.v. olive oil before cooking in warmed up oven for ten minutes.
