Gilthead in sea-salt First published: 19/II/05 Ingredients:
Preparation: The fish is placed in a pan on medium fire filled in with sea-salt. The giltheads are to be turned upside-down when the eyes get white. Notes: Together with the "al piatto" method, the present is an interesting way to cook a fish, as it gets done with neither fats nor contact with flame, water, steam. It can be said, that the sea-salt can reproduce somehow the essence of its natural environment. The fish can be filled in with seasoning and spices to taste. Such cooking method gives the best results with rather fat-free fish with a delicate white texture.
