Food policy

 

Aiming at providing a helpful service to people affected by the Coeliac disease, Domus Alessandra accounts for:

  • a 100% gluten-free kitchen;

  • gluten-free food for breakfast at no extra charge;

For the host's sake too, a Coeliac associated to the Italian Coeliac Association (AIC), on behalf of which takes part in a "restaurant tutoring project," food contamination is carefully avoided by providing that no food containing gluten can be found in the kitchen and processed in food making.

As regards to the definition of gluten-free food and raw materials wheat-substitutes, reference is made to the products to which the use of the symbol of the crossed grain has been granted by the AIC (products also with zero content of wheat starch and with a risk associated to gluten contamination equal or inferior to 20 part per million on 1 kg of product).

As regards to products which might contain traces of gluten, reference is made to the most uptodate AIC handbook.

Domus Alessandra is included in the list of AIC informed&monitored b&b of Italy.
